Quick dinner
roughly cube/chop whatever veg you like - pots, carrots, peppers, onions. Place in a roaster or pyrex, pour on just enough olive oil to turn veg, season with little salt and pepper, place pieces of chicken, turkey breast or cubed meat on top. (If cubed meat stir in with veg). Season with whatever herbs you fancy - cumin, coriander, paprika and a hint of turmeric are good, add either some garlic salt of slices of fresh garlic. cover, cook in oven at 375 for 40 -mins to 1.75 hours depending on which meat you have used. Enjoy.
