Here's a bright and cheery splash of green for St. Patrick's Day in the form of a minty pea spread. Minty peas are a popular pub food in Ireland and all over the British Isles, but this spreadable version leans a little more towards Italy with olive oil and parmesan.  It is a perfect appetizer when served on rustic toast - or you can serve with soup for a meal. If you happen to have fresh peas, fantastic! If not, frozen will do just as well while we're wait...
