Yellow-Eyed Peas are like Black-Eyed peas, but have a yellow-coloured oval eye in the middle instead of a black one. They are popular in the American south. In parts of South Carolina, Hoppin' John is made with yellow-eyed peas rather than black-eyed. Yellow Eyes are about 1/2 inch, oval shaped with a mild, almost sweet flavor and mealy texture. This bean is also referred to as a Dot-Eye Bean and Molasses-Face Bean.
