Creamy Vegan Broccoli Soup

Vegan Creamy Broccoli Soup
-1 large leek
-1 tablespoon olive oil
-2 garlic cloves, minced
-1 head broccoli
-1 1/2 teaspoons white wine vinegar or rice vinegar
-2 cups vegetable broth
-1 cup canned coconut milk plus extra for garnish
-2 to 3 cups loosely packed spinach
-Sea salt and pepper
-Juice of 1 small lemon
-Red pepper flakes
-Slice the white and green parts of the leek into rings and rinse thoroughly using a strainer.
-Heat the olive oil in a large pot over medium heat. Add the leek, garlic, and a few pinches of salt and pepper. Stir and cook until the leek is soft, around 5 minutes.
-Chop the broccoli into small florets and add them to the pot. Still and cook until slightly softened, around 3 minutes.
-Stir in the vinegar, coconut milk, and vegetable broth. Reduce the heat to low and simmer for 5-10 minutes.
-Let the soup cool slightly and then add to a blender and blend until smooth. Add the spinach and blend again. Taste and adjust the seasonings to your preference.
-Garnish with coconut milk and red pepper flakes and serve hot.
