Here's a bright and cheery splash of green for St. Patrick's Day in the form of a minty pea spread. Minty peas are a popular pub food in Ireland and all over the British Isles, but this spreadable version leans a little more towards Italy with olive oil and parmesan. It is a perfect appetizer when served on rustic toast - or you can serve with soup for a meal. If you happen to have fresh peas, fantastic! If not, frozen will do just as well while we're waiting for Spring.
Minty Pea Spread
makes 2 cups
2 cups peas - fresh or frozen
1/4 cup fresh mint leaves
1/4 cup grated parmesan cheese
Juice from 1 lemon
1/3 cup olive oil
1/2 tsp of salt or more to taste
2 tbsp shallot minced
Heat 3 tbsp of water in the bottom of a saucepan over medium heat. Add peas and cover, cooking until peas are at their brightest green - approximately 2 minutes. Drain.
Put peas and remaining ingredients into food processor and give it a good buzz.
Spread on toast, top with shallots and a sprinkle of parmesan.
