In the heat of summer, I don't touch my oven unless absolutely necessary. In fact, I really can't be bothered to do much "cooking" at all.   It's all about slicing, chopping and dressing.  The beauty of summer produce is that it really doesn't need much more than that. Judging from the glorious goods in our box this week - there's hardly a reason to cook at all.  I hope the following recipes help you achieve the heights of summer laziness I aspire to....

Spring is in full bloom with daffodils, forsythia, magnolia, and cherry blossoms all bursting forth.  With it's arrival - the first produce from the farmers' fields has appeared in our boxes.  Baby beets, baby spinach and  beautiful French breakfast radishes are among the early treasures of the season. I recently read an article about people who eat the same thing for lunch every day. There are multiple reasons to make this choice - easy to prepare, cheap, and tasty are common drivers - particularly for those of us who work in an office every day.  One fellow ate a peanut-butter sandwich, with various fruit, vegetable, and dessert accompaniments for 25 years and he is still at it - even now that he's retired!  He says "he's never stopped liking it"....

This week's box arrived on the heels of the polar vortex.  Which does nothing to explain all the colors!  Maybe this week's box is just to remind us that the world is not all grey and white. Enjoy the emerald green spinach, the glorious orange sweet potatoes, and the fireworks of the dried corn and the radishes. If this doesn't cheer you up, nothing will.

Veganuary is a trend sweeping the globe - or so I gather from the abundant number of vegetable recipes popping up in my inbox every morning. Record numbers of people signed the pledge to eat a plant-based diet for the month of January and organizers hope 2019 will be the Year of the Vegan. Now that the holidays are behind us, along with cooking grand meals for the masses, we can take it down a notch and cook for ourselves again. What with the pile of onions that came tumbling out of my box yesterday, I can't think of a better way to spend a rainy Saturday afternoon, than cooking them down to a sweet thick brown paste and turning it into French onion soup....

The first two are very simple and versatile.  The third, a butternut squash quiche, comes from a deep dive into my cookbook library courtesy of Yotam Ottolenghi. It is rather fancy, but definitely worthwhile and certainly suitable for a holiday feast.

With the arrival of late fall, this week's box is resplendent with root veg - carrots, onions, parsnips, garlic and potatoes.  The first thing I do when I unpack my box is prioritize my produce to figure out what needs immediate attention.  Delicate leafy greens are not going to last long, but roots can wait.  Not only do they absorb a great amount of nutrients from the soil - they keep fresh for quite a while in cool, dark places until you are ready to use...
